1st December: Brookies, Eggplant Gratin, Pesto Mushrooms

Eggplant Gratin:
200g eggplant (5g) + 3/4 onion (6g) + 2 cloves garlic + dash of soya sauce + salt + pepper + 80g mushroom (3g) + 2T Greek yogurt (2g) + 1/2 cup almond milk (1.5g) + 1T cottage cheese (1g) + 100g tuna = 12.5g

Brownie Cookies: (Makes 29 small + 8 huge subway-size)

– 2T unsalted butter
– 70g unsweetened chocolate, chopped

– 3/8 cups to 1/2 cup all purpose flour
– 1/8t baking powder
– 1/8t salt

– 1 large eggs
– 3/8 cups granulated sugar
– 1/2t. vanilla extract

– 3/8 cup chocolate chips

Instructions:
1) Preheat oven to 180°C.
2) Melt ① (chocolate + butter) in 30 second bursts in the microwave. Cool to room temperature.
3) Whisk ② (flour + baking powder + salt) together.
4) Beat ③ (eggs + sugar + vanilla).
5) Add ② to ③
6) Stir in ① (chocolate + butter)
7) Stir in chocolate chips.
8) Use a cookie scoop to place dough 1 inch apart.
9) Bake for 10 minutes.
10) Allow cookies to rest on cookie sheet for 5 minutes, then transfer to wire racks to cool completely.

– 2 portobello mushrooms
– 1 clove garlic
– 1/4 onion
– 4t olive oil
– 2t pesto
