29 September: Addicted to Peanut Butter!! :O

Omg today was terrible I started the day by munching on peanut butter out of the jar.. It’s chunky! What am I supposed to do?! It helped me look through my chemistry notes though, standing at the counter. >< I will definitely be 46.5kg or more tomorrow ahhhhh 😦

Finnish Salmon Soup, “Lohikeitto”

Recipe:
– 1.5T olive oil
– 1/2 leek, chopped (white and light green part only)
– 1.5 cups water
– 1 small potato (about 120g), peeled cubed and peeled
– 200g salmon filet, skinned, de-boned and cut into small chunks
– 1/4 cup cooking cream
– 1/8 cup yogurt
– about 3/4 cup almond milk, not sure.
– 3/4 cup cauliflower (steamed then puréed in a blender)
– salt, about 2t
– pepper
– dill for topping
– lemon wedge (optional)

Directions:
1) Heat olive oil in large saucepan
2) Sauté leek until softened
3) Add water + bay leaf, bring to a boil
4) Reduce heat, add cubed potato (cover and simmer until potatoes are tender)
5) Add salmon and simmer for about 3-4 minutes (mine were overcooked)
6) Add cream + yogurt, stir to mix
7) Cauliflower: Chop, steam until soft, blend (to make a purée)
> add to ⑥, stir, add milk, simmer
8) Remove from heat
9) Season with salt and pepper to taste
10) Top with dill

It was way too chunky and grainy.. I guess extra cauliflower = extra liquid

After adding almond milk, it was really yummy! But it was too sweet ugh get UNSWEETENED, mom! 🙂

Taste: Yummy, but too sweet heheh. No cauliflower taste if anyone is wondering.
Texture: Salmon was too dry, perhaps it was cooked for too long. Potato chunks should have been bigger. Soup was slightly chunky and starchy due to cauliflower (and potato?)

Then I had the weirdest lunch-structure ever, ABC soup (cabbage and pork) in a thermos flask.. And I brought a little bowl to go with it 😀

I was getting started on it, then I was messaged by Nic that there was a Council GM. (I DID NOT KNOW UGH. I’m really trying to try but I am unable to.. It just gets worse.) Not to mention I got screwed over again and it’s like a big time screw :/ irreversible screw. Cannot be unscrewed.

So I ran over, we were briefed about Soul Surfer, ended at 11.15am but MsP lectured us until 11.45am (couldn’t eat my soup, just sayin :<) and then I got scolded some more until 12.. I guess I deserved it, forgetting my meeting with MsT and all (for the very first time, I tried to immediately respond to the email and be the first to sign up. It was all for naught, no effort is ever seen. Sure it's not enough, but aren't people supposed to be caring around here? -.^)

Just went to see a teacher, from 2.35pm to 2.55pm. Sob. Literally.

It was pretty darn thrilling man though it was probably quite an asshole move.. But I mean, the emotions are real. They’ve just been suppressed.

I made CREAAAAAMY scrambled eggs! They were pretty plain though, but I was half aiming for that to combine it with minced meat. 6 eggs + 1/3 cup cottage cheese + seasoning:

22 September: Saltwater Café @ Changi Village Hotel + SIM

Oops, stuffed myself again. But not with the buffet, with PEANUT BUTTER. Wtf?! I didn’t even have to, I was still full from the buffet! Not stuffed, but full, and controlled. Ugh. I just kept on going and going because I gave myself 40 minutes. Way, way too much. Why do i make myself uncomfortable and feeling like puking?! S T O P

Ok I think in the week(days) to come, I shall not eat any peanut butter at all, I mean, I’ve had way too much. I’ll eat seeds or nuts instead 😦

Oh yeah, I’m IF-ing until 6.05pm tomorrow! 😀 I really have to get this straight. Just because I’m IF-ing doesn’t make any difference to regular eating. It doesn’t mean i have to stock up on food or I’d starve. Or else I’d never lose fat.

Anyway, I ate the regular egg breakfast and we went out for lunch as a family(-G) after church! Also, the ECM vote is 67%, just barely 0.4% over the 66.6% (hmm..) necessary.

General:
It was alright I guess. Not bad ambience, food was alright (the chicken and chicken satay!) but forgettable. There were quite a few dishes that were pretty bad like the fish ‘teriyaki’, the beef sauce was too gloopy, many of the hot dishes were basically drenched in oil, the spread got quite boring after a while etc..
So while it was alright, it’s not a place I’d bring my family back to — there’s way more out there to try!
Service:
Cleared plates fast, attentive, but the people serving it however.. The roast meat guy was friendly enough, the satay guy was a China dude who couldn’t really understand English well I think (but he tried!), the prata guy was just really moody and black-faced :<
I felt pretty judged getting food tbh I could've sworn when they were lined up and someone refilled the ngoh hiang with crispy ones and I took it, they were muttering and whispering "see when you refill they take" uhm? I FELT WATCHED OKAY AGHH to be fair the ones that had been sitting there were deflated and soggy.
Others:
I honestly thought the price here was $30 for lunch? And in addition the 1-to-1 senior citizen lunch promotion, as well as a 20% UOB discount. But turns out it was $38 per adult, and if you have a 1-to-1 senior citizen you can't use the UOB discount what?! I'd inquired about it over the phone ugh maybe I should've been more clear I guess.

21 September: Steak and Lamb + SIM

I woke up at 7.20am BY MYSELF, didn’t eat anything (I was planning to go back to sleep) and did a whole 政策作文 (though I spent 4 hours doing it).

I was considering nomming on PB the entire time, though I honestly wasn’t hungry at all. I have no idea why but I really barely get hungry should I try to see how long I can go without food? XD

Then dinner, where we ate pretty much the same thing and I overate on onions (wtf)

9.42pm: I am so stuffed rn ugh I mean, if I want to lose fat Ive got to stop eating so much, right? And whoops I planned to go to a buffet with my family tomorrow ^^” What if I have random length fasts ok I’ll skip breakfast tomorrow. (BUT I may eat more during lunch so uhm maybe not a good idea)

Anyway here are some things I made today:
GRILLED CHEESE for my 2nd bro!
– 2 pieces of whole wheat bread
– butter & some mayo (for spreading on the bread)
– 1 slice American cheese
– some mozzarella cheese
– some cheddar cheese

Then I made ‘Mr Peanut Butter Bread’: (in a 3×3 pan for experiment sake)
– 1/3 cup peanut butter
– 1 egg (0.3g)
– 1 teaspoon vinegar
– A pinch of baking soda
– A pinch of salt
– 1/3 packet sweetener (optional, I didn’t)
Total: 570kcal, 12g

The texture was incredible, I don’t even know how to describe it! I mean, it felt a bit like bread, was fluffy ish and ahh you’d never know it was just PB and egg and a common chemical reaction. It’s really high in calories though sigh. If left to the next day it becomes really penutty, but I think if you toast it the peanut taste lessens.

Then there was a no mixer chocolate ice cream that I just chanced upon on http://wokkingmum.blogspot.sg/2012/03/home-made-chocolate-ice-cream.html:
– 100ml whipping cream (2.2g, 350kcal)
– 25g (2.5 squares) lindt chocolate (2.5g, 150kcal)
– 50ml almond milk (1g, 15kcal) + splash of coconut milk
– 1 packet stevia (1g)
Total: 6.7g, 515kcal
