Vietnamese Braised Eggplant:

Eggplant:
– 400g eggplant
– 1T oil
– 2/3 onion
– 2t garlic, minced
– 3T Chinese cooking rice wine
– 1/3 cup Vietnamese stir-fry sauce (see below)
– 1/3 cup water
– 3T unsweetened coconut milk, stirred
– 1.5t Asian chili paste (I accidentally used tablespoons!!)
– Spring onion

Vietnamese stir-fry sauce:
– 1/3 cup chicken broth
– 1.5T fish sauce
– 1/4 packet equal
